Gougères with Smoked Salmon, Caviar and Prosciutto
Ingredients
- ½ cup water
- ½ cup whole milk
- 8 tablespoons (1 stick) unsalted butter, cut into cubes
- ½ teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup grated Gruyère cheese
- ½ teaspoon freshly ground black pepper
- 4 ounces smoked salmon (from Santa Barbara Smokehouse), thinly sliced
- 2 ounces prosciutto (from Via Maestra 42), thinly sliced
- 1 ounce caviar (from Kanaloa Seafood Market)
- Crème fraîche, for serving
- Fresh dill, for garnish
Instructions
- Preheat the oven to 400 degrees. Line two baking sheets with parchment paper.
- In a medium saucepan, combine water, milk, butter and salt. Bring to a boil over medium heat. Once boiling, add the flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.
- Remove from heat and let cool for 2 minutes. Add eggs one at a time, beating well after each addition until the dough is smooth and glossy. Stir in the Gruyère cheese and black pepper.
- Transfer the dough to a piping bag fitted with a plain tip, or use a spoon to drop tablespoon-sized mounds onto the prepared baking sheets.
- Bake for 20-25 minutes, or until golden brown and puffed. Allow to cool slightly.
- Slice each gougère in half. Spread a small dollop of crème fraîche inside and layer with smoked salmon, prosciutto and a touch of caviar. Garnish with fresh dill.

Blackberry Kir Royale
Ingredients
- ½ cup fresh blackberries, plus extra for garnish
- 1 tablespoon sugar
- 1 ounce crème de cassis
- Chilled champagne or sparkling wine
- Lemon twist, for garnish
Instructions
- In a small bowl, muddle blackberries with sugar until well combined.
- Strain the blackberry mixture through a fine mesh sieve to remove seeds, collecting the juice.
- Add 1 teaspoon of the blackberry juice to each champagne flute.
- Pour 1 ounce of crème de cassis into each flute.
- Top with chilled champagne and garnish with a fresh blackberry and lemon twist.
